Frangipane pastry tart recipe


ingredients:
300g puff pastry with chocolate
For the almond chocolate orange:
50 g of 60-70% chocolate melted cocoa
15 cl whole milk
80g caster sugar
10g cornflour
10 g unsweetened cocoa powder
80 g of whole cream
20 g butter
5 g of rum
90 g almonds
25 g candied orange
For apples:
9 Golden Delicious apples

100g caster sugar
50 g butter
150 g dark chocolate 60-70% melted cocoa
Utensils:
1 baking sheet 30 x 40 cm
method:
1. Chocolate puff pastry
Prepare the pastry with chocolate.
2. The chocolate orange frangipane
Bring the milk to a boil in a saucepan. Mix sugar, cornstarch ® and sifted cocoa powder. Add the cold cream and mix well. Pour the heated and cook like a custard milk. Then add the butter and melted chocolate and mix well. Stir in the rum, almonds and candied oranges for a frangipane.
3. Tart apples
Preheat oven to 200 ° C (gas mark 6-7). Roll out puff pastry to a thickness of about 2 mm and the size of the sheet from the oven. The success of this pie depends on the fineness of the falls. Place the dough on the plate. Sew the entire surface using a range avoiding the edge. Peel the apples and cut into thin slices 2 mm thick. Spread the frangipane on the pastry, avoiding the edges. Keep it very tight apples. Sprinkle with powdered sugar and a few knobs of butter several times during cooking. Bake for 30 to 35 minutes.
4. The assembly and finishing dessert
Cut into triangles, and decorate with melted between slices of apples chocolate. Serve warm.
