60g butter, softened
125 g Sugar
1 large egg, beaten
75 g grated coconut
150 g flour
8 candied cherries, halved
method:
Using a mixer, beat the butter and sugar in a bowl until the mixture becomes whitens.

Add coconut flour and then the mixture.
Divide dough into 16 balls. Flatten the balls to about 4-5 cm in diameter and place on a baking sheet. do not place them too close together. Press the center half cherry.
Bake cookies in a preheated 180C oven for approximately 15 minutes.
