Tart Caramelized Grapes

ingredients:
Paste broken base
250g flour
125g of butter
25g sugar
1 egg
4 cups water
1 pinch of salt
cream base:
2 eggs
50g sugar
4 tbsp milk
2 tbsp cornflour
60 g ground almonds
various:

700 g of grapes of different colors
10cl grape nectar
1 cinnamon stick
10 g of butter
 100 g Sugar
method:
Dissolve the salt in water.  flour mixed with sugar, and soft but cold butter . Add the salt water and the egg. Mix to a smooth paste . Not too much work for not too give it body. Film and refrigerate at least 1 hour.
Line a circle or a pie pan with the pastry , prick the bottom . Before rolling , folding the dough into 4 and give it a turn or two to make it a little flaky. Refrigerate for 1/2 hour.
Preheat oven to 180 ° C.
Meanwhile , prepare the cream .
In a bowl, pour the milk and cornstarch , whisk , then add 50 g sugar , almond powder and 2 eggs . Mix well .
Remove the dough from the refrigerator , there spread the cream and cook the pie in the oven for about 15 minutes. Once browned, remove from oven and set aside on a rack.
Prepare grapes, stalk , wash , drain . Pour the sugar (100 g) in a pan, add the grape nectar , cinnamon stick and bring to a boil. Cook until light caramel.
Pour the grapes in the pan , roll the caramel for about 6 minutes. Remove from heat and spread over pie .

Let cool and enjoy.
