Almond Shortbread dough

ingredients:
180g flour
100g almond powder
40g icing sugar
125g butter, diced
1 egg
method:

1 - Mix the flour , icing sugar and almond powder.
2 - Add the butter and sand it between your hands to get a powder. Form a fountain and pour the egg. Mix and amalgamate all . Do not hesitate to put your hands. Form a ball , cover with plastic wrap and set aside in refrigerator for 1semi  hour.
3 - The dough is fragile is my trick to spread and drop it into your mold :
Cut a large piece of parchment paper. Spread the paste over the dough is oily but normally does not stick. If you have some difficulties, fleurez ( sprinkle ) flour paste .
When the dough is spread format of your mold , take your rolling pin and roll the dough around the roller. Lift the assembly and pull down the top of your mold. You will have the parchment paper on top you shall put away gently .
Before you cook the dough, let it rest in the pan still in the refrigerator so that it healed and it did not shrink during cooking.
