Rolled omelette with goat cheese


ingredients:
10 eggs
6 small fresh goat cheese
6 sprigs of mint
2  tablespoons of peanut oil
2  tablespoons olive oil
Salt and pepper
method:
Thin out and chop the mint. In a bowl, mash the cheese coarsely with a fork. Add the mint and olive oil, salt and pepper. Mix well.
Break the eggs into a bowl and beat them them sharply. Salt and pepper.

Heat the peanut oil in a large skillet and pour the beaten eggs into it. Cook until the omelet is set by turning halfway through cooking.
Slide the omelette onto a plate and garnish with the preparation of goat cheese. Roll the omelette up tightly and cut it into thick slices.
Arrange them on a plate and serve immediately with a rocket salad.
