Pineapple with coconut and strawberry pie

ingredients:
1 shortbread dough
40 cl coconut milk
4 egg yolks
40g sugar
50 g of cornstarch
1/2 pineapple
250 g strawberries
method:
1. Spread the mixture into a pie pan. Prick with a fork.
2. Boil the coconut milk.
3. Whisk the egg yolks with sugar and
cornstarch. Pour the coconut milk over boiling, whisking.
4. Put the unit in the pastry and bake 30 minutes in the preheated oven at 180 ° C. Allow the pie to cool.
5. Remove the rind from pineapple, cut into thin slices 2 mm. Place the cold pie circles alternating pineapple and strawberries cut into thin slices. Serve chilled.
