cookies with almond from the art of cooking




ingredients:
500 g almonds (peeled and poached)
  1 pinch gum arabic powder.
  1 teaspoon baking powder
  1 teaspoon butter
  4 eggs
  250g icing sugar
  1 tablespoon grated lemon rind
decoration:
  Egg white
  200 g almonds
method:
1-mix the almonds and mix with gum, yeast, butter, 3 egg yolks 1 egg, icing sugar and lemon zest. Knead just until smooth.
2-Fashion small balls with almond paste, dip in egg white and then in a bowl filled with almonds. Arrange them on a greased plate and bake in a preheated oven at a medium temperature.
