ingredients:
320 gr sour cherries in syrup
200g fine semolina wheat
80 cl of almond milk
150 grams of sugar
1 vanilla pod
3 eggs
Butter for the pan
2 tablespoons brown sugar
method:
Preheat oven to 180 °. Prepare a water bath by heating the water in the drip pan
Butter a baking dish (here a pie plate 28 cm in diameter)
Drain the cherries. Spread half of the fruit in the dish. Reserve the other half.
In a saucepan, heat the almond milk, sugar and the seeds that you have obtained by scraping the inside of a vanilla bean. From the first stirrings, add the semolina. Let simmer for about 4-5 minutes. When the meal is cooked, remove from heat and add the eggs one by one. Pour the mixture into the dish on the cherries. Divide the rest of the fruit pressing lightly into the dough. Sprinkle the surface of the cake with 2 tablespoons of brown sugar.
Place your dish in fried licks and bake for 30 minutes at 180 °. Take out and let cool.
