meatballs with eggs


ingredients :
1 onion
350g minced lamb (or beef)
5 eggs
1 slice of bread
½ tablespoon of cumin and cinnamon
½ teaspoon ginger
1 tablespoon ground coriander
400 g tomatoes, peeled and chopped
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
salt and pepper
method:

1. Peel and finely chop the onion. In a bowl mix the meat with 1 egg. Add the bread moist, drained and crumbled and spices. Salt and pepper. Shape into small balls.
2. In a large skillet, fry the meatballs with hot oil. Add the onion and chopped tomatoes. Pour 20 ounces of water and allow to slightly reduce the sauce for 10 minutes.
3. Prepare four hollow in the pan to drop the eggs without breaking. Continue cooking until the egg white is well taken.
4. Sprinkle with cilantro and serve immediately.
