Lemon mousse with white chocolate and agar


ingredients:
60 g white chocolate
25 cl skim milk
1 g of agar
1 lemon
method:

1. Cut the chocolate into pieces. Dissolve the agar in cold milk.
2. Heat the milk and chocolate in a saucepan, until the chocolate is melted. Add 2 tablespoons of lemon juice and some zest.
3. Pour the mixture into ramekins. Book at least 2 hours in the refrigerator before serving.
