Shortbread stuffed with white chocolate


ingredients:
For the dough:
100 g flour
50 g of brown sugar
50 g butter
1 egg yolk
For the ganache:
100 g of white chocolate
25 g of cream
1 teaspoon instant coffee, or a few drops of coffee flavor

method :
1. Make the ganache: Melt the chocolate very gently. Make warm the cream and fold it the instant coffee or coffee extract. Mix white chocolate and cream. Let cool for about one hour at room temperature.
2. Make the dough: Mix the softened butter with the flour. Add the sugar and egg yolk. Mix until a smooth paste.
3. Spread over 3 mm thick, cut out biscuits with cookie cutter. Place them gently on a plate.
4. Cook for about 10 minutes in the preheated oven at 180 ° C, the shortbread should be very lightly browned. Let them cool.
5. Place a spoonful of ganache on half of shortbread, then cover with a second.
6. Decorate the horn decorated to give a more shortbread worked in appearance.
