ingredients:
150 grams of flour
120g caster sugar
50g grated coconut + 40 gr for decoration
90 ml of melted butter
100 ml buttermilk
1 egg
1 tbsp lime zest
juice of 1 lime
1 bag of baking powder
2 kiwis cut into thin slices
icing sugar to decorate
method:
Beat the egg with the sugar for 3 minutes at a maximum speed of mixer.
Add the buttermilk, butter, lemon juice, and beat for 30 seconds at the minimum speed.
Stir in coconut, lemon zest and lemon juice, yeast and flour.
Mix with a spatula until smooth.
Pour into a buttered muffin.
Garnish with three slices of kiwi and a little coconut (40 gr.)
Bake in preheated oven at 180 degrees for 25 to 30 minutes.
Remove from oven and let cool, then sprinkle with icing sugar.
