Victoria Sponge recipe


ingredients:
4 eggs
225 g sugar
225g flour yeast
2 teaspoons baking powder
225 g butter
To decorate:
strawberries or raspberries
strawberry jam and raspberry
Whipped cream, whipped cream or butter cream
method:
Preheat oven to 180C.

In a large bowl, combine the eggs, then add sugar, flour, baking powder and butter.
The all electric mixer but be careful not to over mix mixer - as soon as everything is mixed, you should stop. The final mixture should be soft consistency.
Divide mixture evenly between two molds buttered 20cm diameter.
Place the molds in the oven and bake for 25 minutes.
Remove from oven and let cool in their pan for five minutes. Then remove from pan and cool on a rack.
Assemble the cake by spreading a layer of cream and jam between the two shares.
Sprinkle with icing sugar and decorate as you wish.
