ingredients :
- 50 g fresh coriander
- A handful of mint
- 50 g almonds
- 2 large cloves of garlic
- A pinch of dried chilli flakes
- 15 cl of virgin olive oil
- 4 fish
- Lemon juice
- Salt and pepper
method:
- Put the coriander, mint, almonds, garlic and pepper in a food processor or blender.
- While continuing to mix, slowly pour the oil to a smooth paste.
- Season with salt, pepper and lemon juice.
- At the tip of the knife, incise deeply in two places both sides of the fish.
- Coat the fish without forgetting the slots.
- Cover and let stand for 1 hour in the fridge.
- Cook the mullet under a preheated broiler, 4-5 minutes on each side, making sure they do not burn
