method:
1. Separate the whites from the yolks. Take the zest and lemon juice.

3. Beat the yolks with 100g sugar,
lemon zest and lemon juice. Stir in the flour and cornstarch and milk and hot butter.
4. Whisk the egg whites until stiff. Add the remaining 50 grams of sugar and continue to whip the whites for meringue. Stir in 1/3 of the preparation with a whip in the above mixture. Then add the rest gently with a spatula.
5. Pour cake pan 22 to 24 cm in diameter, with a high enough ledge, as a pan for example. Cook for about 40 minutes in a water bath in the oven preheated to 180 ° C, until the top of the cake starts to brown and the cake is almost set.
6. Allow to cool before removing from pan.
