ingredients:
350 g rhubarb
Sugar 100 g
20 cl whole cream
2 egg yolks
method:
1. Peel and cut the rhubarb into 1cm slices.
2. Place them in a pan with 40 g of sugar. Heat until the rhubarb starts to produce steam. Cover and simmer gently for 5 to 10 minutes, it should melt completely.
3. Let reduce for 10 minutes, stirring regularly.
4. Mix rhubarb cooked with egg yolks and remaining sugar.
5. Let cool completely, then add the whipped cream rise.
6. Garnish individual molds, let it take 5 hours in the freezer.
7. Turn out the perfect plates and garnish with red fruit.
